Yield 2-4 servings
Ingredients:
¼ cup oil. I like olive oil, but any other oil is fine
1 lb of fresh lo mein noodles
½ head green cabbage, core removed and thin sliced
1 ea red bell pepper, halved, seeds removed, and thin sliced
1 head broccoli, florets removed
½ bunch green onion, cut into 1” sticks
1 lb shrimp, you can cut the shrimp in half, like your splitting them if you like. It’ll better disperse the shrimp in the noodle dish
For the sauce:
¼ cup oyster sauce
2 tbsp soy sauce
2 tbsp white distilled, rice, or white wine vinegar
8-10 garlic cloves, peeled, and minced
Method:
In a pan over medium high heat, add about half the oil. Once the oil is hot, add your green onion. As soon as you see the green onion start to turn golden brown and develop some color, add your cabbage, pepper, broccoli, and shrimp. You can do this step in batches if you need to. You don’t want to over crowd your pan.
Once your cabbage starts to develop some color, stir and let if form some color once again. Only cook the cabbage for about 30-45 seconds. Lay the cabbage, pepper, broccoli, and shrimp onto a flat surface to cool. turn the heat down to low-medium, add the other half of your oil, followed by the noodles.
Get the noodles into a single layer in your pan and let them toast in the oil. after about 45-60 seconds, some noodles will turn lighter in color and begin to turn golden brown. Mix them up and lay back into a single layer. You can repeat this process as many times as you want.
Once your noodles are toasted to your liking, add about a cup of water and let simmer for a couple of minutes or until almost all of the liquid is gone. If your noodles are not cooked, add another ¼ - ½ cup of water to finish cooking. Once your noodles are about 95% of the way done, add the sauce, and another ¼ cup of water. Turn the heat up to medium/high and let simmer until all of the liquid absorbs into the noodles. Keep sautéing the noodles until they start to lightly char. Mix around and let char again.
Turn the heat off and add your cabbage, pepper, broccoli, and shrimp
Serve immediately.
