Yield: 4-6 servings
Ingredients:
10 whole eggs
2 cups heavy cream or half and half
2 pinches kosher salt
1 pinch black pepper
About 4 cups of any bread, cut or torn into about 1” pieces
6-8 slices of your favorite bacon, cooked
2 cups baby spinach, cooked and water drained
2 cups broccoli, cut into bite sized pieces
4-6 oz extra sharp cheddar cheese
¼ cup grated parmesan
Method:
Preheat oven to 375 degrees
Crack your eggs into a large mixing bowl. Add heavy cream, salt and pepper, and whisk to combine. add your bread to the mix and let it soak while you prepare the rest of the ingredients.
As you have other ingredients ready and cooled, add them right to the bowl with your eggs and bread. Add the cheeses, and mix well to combine all of the ingredients evenly.
Place the entire mixture into your oven and bake for about 20-25 minutes or until the egg has set and the pieces of bread will turn golden brown. You can check the egg with a toothpick. Remove from oven, let rest 5-10 minutes and serve.
Cook’s notes:
If you make the egg, dairy and bread mixture, the rest of the ingredients can be entirely up to you. You can use this to clean out your refrigerator or your favorite ingredients.
